Polyphenols are active compounds found in tea leaves - the major polyphenol compounds in green tea are epigallocatechin-3-gallate (EGCG), epigallocatechin, epicatechin-3-gallate and epicatechin, gallocatechins and gallocatechin gallate. Polyphenols are extracted through an acqueous process (using water), a centrifuse and microfiltration.
